Special Instructions
1.Mash grain in 3.25 gallons of water at 150 degrees F for 60 minutes.
2.Sparge with 168 to 170 degree F water to collect 5.75 gallons of wort.
3.Total boiling time is 90 minutes. At beginning of boil, add Citra and Simcoe hops and boil 45 minutes.
4.Add 0.75oz Cascade hops and boil for 30 minutes.
5.Add 0.75oz Cascade hops and boil for 15 minutes.
6.Add 1oz Cascade hops to finish.
7.Whirlpool and cool to 69 degrees F and pitch yeast.
8.Oxygenate and aerate well.
9.Ferment at 69 degrees F for 7 days.
10.Rack to secondary fermenter. Continue fermentation for 7 more days.
