Special Instructions

Single-step infusion mash at 147F (64C).
2.
Chill the wort to 65F (18C), pitch the yeast, and place the wort in a 60F (15C) fermentation chamber for 5–7 days.
3.
Raise the temperature to 65F (18C) for 1 day for a diacetyl rest.
4.
Rack the beer and age at 35F (2C) for 21–30 days, then keg or bottle.
