Special Instructions

1.
Mash grain with rice hulls according to the schedule above.

Alternatively, single infusion mash at 150-154F

90 minute boil adding hops according to regimen above

Wort chiller in boil at 10 minutes, chill to 62F, let break material settle, rack to fermenter and aerate

Pitch 1.7 packages of fresh liquid yeast or 1 package of liquid yeast in a 1.3-liter starter
6.
Ferment in primary at 62-63F till complete attenuation
7.
If using WY3068, it is top fermenting and needs head space - at least 1/3 the volume of beer that you are fermenting.
8.
Prime with 4 oz corn sugar, bottle, carbonate @ 70F for 2 weeks
9.
NB for their AG kit recommends step mash: 122F 20 min., 149F 30 min., 158F 30 min., mashout 170F 10 min., fly sparge 170F

Notes:

This is a very nice Hefeweizen. I did a docoction mash according to the above schedule. Should be fermented at 62-63F if you like the banana tasting esters to be significant in the profile. Warmer you ferment, the more clove esters will be produced. I don't have a way to closely control fermentation temperatures lower than the ambient temperature of my house. I placed it near a cracked window in my basement. The temperature ranged from 62-68, probably averaging 66. The beer has a nice banana-clove flavor, more clove than banana. Nice light yellow hazy appearance as a Hefe should have. This is a keeper. Will brew again.
