Tried for barley wine similar to J W Lees (fail). Cold basement (60f) for 1 month and sg stalled at 1.030. Transferred to secondary with cubes, moved carboy to kitchen, FG 1.010, too low for what I wanted. Secondary for 3 months, Port soaked oak cubes for 1 week, bottled and primed with 1/2 c port and 4 oz honey. Ended up at 9.8% abv, lots of oak, hints of port coming through and highly carbonated (makes up for the lack of maltiness). Tasty but no J W Lees.
** Yeast note **
I have brewed most of my beers in 2013 with Nottingham Ale yeast. and for lower gravity beers the yeast has made super clear barely noticeable fruitiness from the yeast. Larger beers (over 8% abv) however have been overly estery/phenolic, big sweet fruit aromas. The Wee Heavy that fermented out in 3 days, had a huge Belgian bubblegum aroma, and this Barley Wine comes off as overripe apples and pears. This yeast has also over attenuated all beers by .005 to .010 points.
