Special Instructions

1.
pull the wort from two tuns and boil in two seperate Keggles until the desired volume is reached.
2.
Mash for 60 at 152, 15 at 168.
3.
Start ferm with (3) Safale 05 yeast and finish with White Labs high gravity yeast.
4.
This should be great to age.

Comments

    Good idea to split the reds so you don't get too much sweet or too much biscuit, but get a deep color.

    CaraRed is a crystal malt. It should be sweeter, more caramel, and add more body than melanoidin. Caramel malts are made by heating moist/wet malt.

    Melanoidin is like an extra dark munich malt. It should have a toasty, bread crusty maltiness. It would only add sweetness if its mashed at a high temperature. Melanoidin is probably made similar carared, except its kilned dry rather than wet.

    Use 2 separate hop spiders to score more ferment juice next time.

    Final Gravity of 1.010 with the help of WLP099 after initial ferment. Currently Dry Hopping with 1 oz of Chinook and 1 oz of Fuggle to wake up the boozy sweet flavor and still keeping it English. Trying to rival Devil Dancer... can't wait to clear with finings and carb.

    Cold crashed after a week of DH, Gelatin finings in, will let sleep until awaken needed on tap. When swirled after Gelatin drop, lots of red present.... remember that band called Type O Negative ?

    Still tastes a little sweet, updated recipe to remove the Fuggles DH and also cut the Cara Red down the half a pound.
