Special Instructions

1.
Prepare 2 gal sterile tap-water ice block to cool
2.
Prepare 1 quart starter, decant
3.
Prepare 5 gal water (distilled/tap=9/1)
4.
Mash in small pot wheat, rye and golden promise malt in 1 gal water: polysaccharide rest 153F for 30 min
5.
Decoction (maillard rxn) of wort from wheat, rye and golden promise small mash: canning jars in pressure cooker at 250F for 15 min
6.
Mash all remaining grain in 3 gal water: dough-in at 100F, add small grain mash and melanoidin wort, protein pause 120F, polysaccharide rest 153F for 60 min, mash-out 170F
7.
Boil, hop addition, add extract, return to boil for 10 min, cool with 2-gal sterile ice block
8.
Primary fermentation 70F for 5 days, contains all protien trub (not hops)
9.
Secondary fermentation 68F for 2 weeks
10.
Dry hop during last 5 days of secondary
11.
Cold crash and gelatin to clarify
12.
Bottle with 6.5 oz dextrose, about 3 volumes

Notes:

The white wheat tang and citrus hop flavor are quite evident, and it has a savory, mellow finish (perhaps too much so as it is somewhat contrasting to the tang and citrus) from the golden promise. The high-temperature maillard reaction in the pressure cooker along with the flavor retention/accentuation of Denny's Favorite 50 seems to have enhanced those grain flavors and aromas, especially given their limited weight in the grain bill.
