Special Instructions

1.
Traditional multi step mashing.Prot-124F/30 min.Alpha.-154F/30min.Mashout 160F/10min.
2.
sparge at 170F

bring wort to boil
4.
add 1oz. hops at 60 min
5.
add .75oz. hops at 30 min
6.
cool wort to 50 F pitch yeast
7.
ferment at temp of 45-50 untill fermentation is finished 1-2 weeks
8.
rack to secondary and add nibbs to bottom of carboy
9.
lager at temp of 35-39 6-8 weeks
10.
diacetyl rest at 55 for 2-5 days
11.
Rack to bottling bucket/bottle
12.
Condition for several weeks.
13.
Drink and be happy.
14.
add .25oz. hops at 10 min
15.
Add Irish moss to boil last 15 min

Notes:

The color is dark with a hint of red. The clarity is perfect I can drink it right out of the bottle, and the head is just right not too much a good layer across the top. The aroma is of the cocoa nibs smells almost like a coffee. The taste is of coffee at first but then the cocoa nibs shine thru. I was thinking this bock would have a little more thickness to texture but overall with the clarity of the beer it makes me very happy. I like this recipe a lot will definately brew it again. My friends that like dark beer say it is my best beer yet.

    I was a big fan of the Sam Adams Chocolate Bock as well. I'm trying out a dunkler bock recipe right now. If it works as a good base, I may try adding chocolate nibs next time as you did. Cheers!
