Special Instructions

1.
19.5 lbs grain X 1.25 quarts water = 24.4 qrts = about 6 gallons
2.
Doe into 133° water - mash for 30 minutes @ 122°
3.
After 30, began raising temp to 150°....took a total of 40 min to step mash to next temp.
4.
Held mash @ 150° for 60 minutes.
5.
After 60, began raising temp to 170°....took a total of 30 min to step mash to this temp.
6.
Held mash @ 170° for 10 minutes.
7.
Began sparging for 15 gallons, but only got 12.5 before hitting 1.010.
8.
90 minute boil....
9.
60 minutes remaining - Add 3 oz of 2.9% Hallertauer hops
10.
With 30 minutes remaining for boil, wort reads at 1.065
11.
10 minutes remaining - Add 1/2 tsp WYeast Yeast Nutrient stirred into 1 cup of hot wort.
12.
10 minutes remaining - Add 1 Whirlfloc tablet
13.
5 minute remaining - Add 1 oz of 2.9% Hallertauer hops
14.
5 minute remaining - Add 1 oz of 4% Hallertauer hops
15.
5 minutes remaining - Add 1 LB dextrose.
16.
After adding 6 gallons of water from HLT for a total of 13 gallons wort, tested 1.052 for OG!
17.
10 minute whirlpool.
18.
After cooling to 65°, split wort between two carboys, 6 Gal each.
19.
Aerate the shit out of each.....
20.
Pitch Wyeast-1056 (Ale) starter in one batch, WL-080 (Ale/Lager) starter in the other.

Notes:

The 1056 half tastes smooth, crushable and clean.....as always, though noticeably more hop forward. Nice head that slowly dissipates as the glass level drops....good lacing.....beer is fairly clear. Still young, but otherwise, perfect. The 080 half still imparts a pronounced sulfuric nose, but also tastes smooth, crushable and clean.....also slightly less hop forward, but crisp, fairly clear with lacing and head. Also still young, but am placing it in 34° keezer for a bit of cold crashing.....see if time allows that sulfer to bleed off. Regardless, although it imparts it's own distinct taste, its still wonderful.
