Special Instructions
1.Prepare Pumpkin - 3 days before brew; halve pumpkin, remove seeds; cut halves into pieces about 6 inches long.
2.Prepare Pumpkin - Cover cookie sheets with aluminum foil, arrange the pieces on cookie sheets and sprinkle them liberally with brown sugar.
3.Prepare Pumpkin - Roast in oven at 375 until soft, about 2 or 3 hours.
4.Prepare Pumpkin - Cool pumpkin and peel the skin. Dice into large cubes, keeping juice. Store covered in bowl.
5.Brew day - On brew day, warm pumpkin to room temperature.
