Special Instructions

1.
Strike water: 5.5 gal @ 130F ph powder - target temp 122F for 15 minutes
2.
Remove 2 gal of thick mash (not wort) to kettle and boil for 30 minutes
3.
Add boiling wort back to mash tun - target 150F for 40 minutes. Add boiling water if needed.
4.
Add 1.5 gal water @ 152F and stir gently - target temp 150F for 20 minutes
5.
Empty into kettle
6.
Sparge 3 gal of water @ 185F - target 174F for 10 minutes.
7.
Empty into kettle
8.
Boil 90 minutes and add hops to schedule. Add Whirlfloc and Fermfed at 5 minutes.
9.
Chill to 53-55F - pitching temp. Direct pitch dry yeast.
10.
Maintain 54F for 5 days.
11.
Maintain 58F for 5 days
12.
Maintain 62F for 5 days.
13.
Raise to room temperature. Check gravity. Leave a room temp until gravity is stable 3 days.
14.
Move to secondary. Store at <35F for 8-12 weeks.
15.
Bottle with bottling yeast and carb tablets to med-high carbonation.
16.
Allow up to 4 weeks at room temp to carbonate.
17.
Store near freezing until Oktoberfesting time.
19.
Bottle with bottling yeast and carb tablets to med-high carbonation.
20.
Allow up to 4 weeks at room temp to carbonate.
21.
Store near freezing until Oktoberfesting time.
