Special Instructions

1.
Strike water: 4.7 gal @ 166F - target temp 152F for 60 minutes
2.
Top off 1 gal @ 155F and stir gently - do not foam the mash
3.
Collect about 1qt of wort and recirculate gently into the mash. (X5) or until wort is clear.
4.
Empty wort into kettle.
5.
Sparge 1.8 gal of water @ 182F for 10 minutes.
6.
Collect about 1qt of work and recirculate gently into the mash. (X5)
7.
Empty into kettle
8.
Sparge 1.8 gal of water @ 174F for 10 minutes.
9.
Collect about 1qt of work and recirculate gently into the mash. (X5)

Empty into kettle
11.
Boil 90 minutes and add hops to schedule. Add Whirlfloc and Fermfed at 5 minutes.
12.
Chill to 53-55F - pitching temp. (NOTE: Using reclaimed yeast. Chill starter to pitch temp.)
13.
Aerate wort and pitch starter.
14.
Maintain 50-53F for 5 days.
15.
Maintain 54-56F for 5 days
16.
Maintian 57-60F for 5 days.
17.
Check gravity - must be below 1.020, preferably 1.015. Keep in primary if too high.
18.
Move to secondary. Store at <40F for 8-12 weeks.
19.
Bottle with bottling yeast and carb tablets to med-high carbonation.
20.
Allow 4 weeks at room temp to carbonate.
21.
Store near freezing until Oktoberfesting time.
