Special Instructions

1.
Bring 7.25 gallons of water to 118F and dough in with the flaked oats.
2.
After 15 minutes, bring water to 152F and dough in the rest of the grain.
3.
Let rest for 60 minutes, stirring and applying heat as necessary.
4.
After mash, bring wort to a boil and add half ounce of Williamette hops.
5.
5 minutes from beginning of boil, add toasted Chesnuts.
6.
30 minutes from beginning of boil, add half ounce of Williamette hops.
7.
60 minutes from beginning of boil, cut heat. Cool wort and transfer to fermenter.
8.
Pitch yeast and ferment at 64F for 5 days.
9.
Over the course of 3 days, gradually raise temperature to 72F.
10.
Ferment at 72F for 3-5 days. Once beer is attenuated, transfer to bottling bucket/keg.
