Special Instructions

1.
Bring 10 gallons of water to 118F.
2.
Add grain.
3.
After 20 minutes, stir and raise to 151 for 100 minutes, stirring every 10 to 15 minutes.
4.
Remove grain, partigyle if desired. Bring wort to boil for 2 hours.
5.
60 minutes from flame out, add challenger hops.
6.
30 minutes from flame out, add EKG hops.
7.
At end of boil, bring rapidly to 60F.
8.
Pitch yeast. Requires 300 to 400 billion cells of each yeast type.
9.
Ferment for two weeks at 68 to 70.
10.
For weeks three and four, decrease to 65.
11.
Secondary at 60F for 2 to 3 months, with oak chips and cocoa suspended in fermenter until desired flavor reached.
12.
Add priming sugar and additional yeast, preferably additional Trappist yeast, 15 to 20 minutes before bottling.
13.
Gently stir, without splashing, for 2 minutes then proceed to bottling.
14.
Within 1 month beer should be carbonated. Bottle condition for at least 2 months.
