Brewed Monday 5/22/23 Mashed in 15# VA Pils (Rude & Murphy) and 1/4# Victory Mash temp around 149 ~~> 147* over an hour or so Mashed with 5 gallons filtered water - only added 10ml Lactic Acid Single decoction of about half the mash for 15-20 mins Low volume on first run - only about 3 gallons Sparged about 6 gallons Added 6 more ml of Lactic Acid and 4g Calcium Chloride Pushed the temp up to 168ish Target mash pH is in the range of 5.2-5.3 (pH meter broken) OG 1053 - might add a touch of sugar to bump gravity and ensure full attenuation Second beer (sour) 1051 Pitched 1.25L of 34/70 slurry at 1130p at around 62* Got down to 48* or so overnight by 7a Trying to keep it around 48* for the first stage of fermentation Kept it around 50 until it slowed then bumped up to 53-54 Gravity (6/1 - ~10 days): 1.016-17 Need to get this down 5-6 points, at least Raising temp from 54 >> 58 Might add some sucrose if there's not more activity soon Adding 5oz of sucrose to give it a bump and re-activate yeast Bumps OG up to 1.056 >> hopefully gets down to 1012-13 Crashed after IPA o/a 6/14 Only got to lager for two weeks or so before kegging Kegged Thurs 6/29 to let settle and get carbed ahead of competition entry in early July FG 1.012
