Special Instructions

1.
Bring 4 gallons of water to 160 deg; remove heat and steep grains for 30 minutes.
2.
Boil 300 ml water (covered with foil) for 5 minutes (for rehydrating yeast). Let cool to 70-80 deg.
3.
Sparge grains with 2 cups 170 deg water and remove grains.
4.
Stir in and fully dissolve all extract(s). Add water to bring brew pot to 5 gallons.
5.
Bring to boil; start :60 timer and follow hops schedule.
6.
At :30, check temp of yeast rehydration water and add yeast if 70-80 deg. NOTE 2 yeast packs.
7.
At :15, carefully place the cleaned and drained immersion chiller into the brew pot to sterilize.
8.
At :15, add Irish Moss.
9.
At flame out, add steeping hops and allow to steep 10 minutes before cooling. Loosly cover brew pot.
10.
Add cold water to bring wort volume to batch size.
11.
Chill wort to 70 deg and rack to primary. Add water if needed to achieve final volume.
12.
Mix wort with sanitized spoon. Take and record OG.
13.
Pitch rehydrated yeast; primary at 68-70 deg until fermentation is complete (2-3 weeks).
14.
When fermentation is complete, rack to secondary. Add dry hops and allow 10 days in secondary.
15.
For bottle carbonation: Add 130 g corn sugar to 500 ml water and boil for 5 min. Chill to room temp.
16.
Bottle and condition at 68-72 deg for 1-2 weeks.
