Special Instructions

1.
Boil 150 ml water (covered with foil) for 5 minutes (for rehydrating yeast). Let cool to 70-80 deg.
2.
Bring 4 gallons of water to boil.
3.
Remove heat; stir in and fully dissolve all extract(s). Add water to bring brew pot to 5 gallons.

Bring to boil; start :60 timer and follow hops schedule.
5.
At :15, carefully place the cleaned and drained immersion chiller into the brew pot to sterilize.
6.
At :15, add Irish Moss.
7.
Check temp of yeast rehydration water and add yeast if 70-80 deg.
8.
At flame-out, add cold water from sterilized pitcher to bring wort to batch size.
9.
Chill wort to 70 deg and rack to primary.
10.
Mix wort with sanitized spoon. Take and record OG.
11.
Pitch rehydrated yeast and primary at 68-72 deg for 1 week.
12.
After 1 week in primary, rack to secondary. Allow 2-3 weeks in secondary.
13.
For bottle carbonation: Add 130 g corn sugar to 500 ml water and boil for 5 min. Chill to room temp.
14.
Bottle and condition at 68-72 deg for 1-2 weeks.
