Special Instructions

1.
Water chemistry for 6.5 gal: 1.5 g gypsum, 3.0 g calcium chloride, 1.5 g magnesium
2.
Water chemistry for 6.5 gal: 0.2 g Kosher salt, 2.0 g of ascorbic acid.
3.
Adjust pre-grain water pH = 6.0
4.
Mash in grain at a strike temp of 152 F to get 148 F, turn off heat and go to the gym for an hour
5.
Mid-mash pH should be roughly 5.2 to 5.4
6.
60 minute boil with hop additions as above. 220 V mode on the Anvil.
7.
Pitch a 1.5 litre starter of Saflager 34/70.
8.
Ferment at 55 F.
