Ferment cool, at 60F, for about ten days, and then let the beer free-rise to anything above 68F

Notes:

This is a great brew. Color is a deep clear amber with mild carbonation and a thin tight off white head. Aroma is roasted with a hint of smoke and coffee. It has a medium body with a creamy mouthfeel. Flavor is mild sweet corn backed by a mild roasted note. In the aftertaste a light bitterness shows finishing with a slightly sour twang. I will definitely brew this again. I may try cutting the Rye in half next time.
