Special Instructions
1.All-grain brew in a bag (BIAB) for direct heat mash, then use a pre-heated "cooler" for sparging.
2.Use low flame to slowly increase temperature during the lower temperature mash rests for enzymes with broad active ranges..
3.Reduce flame and maintain boil with kettle partially covered. Saves fuel and limits loss of volume from evaporation.
4.After flame out, divided wort into two containers to maximize surface to volume ratio. Used cold tap water for initial temperature drop to about 80C, then ice bath to expedite temperature drop to 19C.
5.Used distilled water and added salts because my tap water is unreliable.
