Special Instructions
1.Preheat 6.9 Gal of water to 156F (per AF manual - 8# grains @ 120V)
2.Add grains and stir to avoid clumping (duh)
3.Reduce temp to 152F (a decent temp for all 3 grains)
4.Mash (wait) for an hour at 152F (for saccharification rest - is this time optimal?)
5.Increase temp to 170F
6.Vorlauf (recirc) until the runnings are clear
7.--- No Sparge ---
8.Remove grain bin (allow to drip into wort)
9.Bring wort to a boil - we will boil for 30 minutes total on this timeline...
10.0:10 - hydrate irish moss in 1/2 c of water (this is a fining agent - we will add it later...)
11.0:15 - Put chiller in to give it time to sanitize
12.0:15 - add irish moss
13.0:22 - add Lotus Hops
14.0:30 - Cool wort to 70F (15-20 minutes?)
15.Transfer to fermenter
16.Pitch yeast, cover (with airlock), and store at room temperature (66-70F)
17.Wait for airlock to stop bubbling (2 weeks - new yeast, I am guessing, but give it time to settle)
18.--- No diacetyl rest is needed - this is an ale ---
19.Bottle w/ 0.5 tsp table sugar / bottle
20.Store at room temperature for a week or two (test it!)
21.Chill and enjoy...hopefully
