This Northern Brewer recipe kit was accomplished on an electric Spike Brewing system, on 3-12-22. Adjusted "Efficiency" down from 80% (projected) to 74% to more accurately reflect actual OG obtained. Also of note, one smackpack of yeast was used to create a starter and the second blended with it prior to pitching.

Special Instructions

1.
Mash in strike temp high, giving initial mash temp of 128° for first ten minutes before adding water to cool.

10:40 - Start circulation at 122° for 20 minutes

10:48 - Discovered mash temp at 116° with stuck circulation. Mash had become a brick. Broke it up and mixed in 1LB of rice hulls. Circulation resumed and temp climbed back up to 122°.

11:20 - Start 30 minute circulation at 149°.
5.
11:50 - Begin HLT temp kick to 158°.
6.
12:02 - Start 30 minute circulation at 158°.
7.
(HLT @ 160° maintains mash temp @ 158°......2 degree difference.)
8.
12:30 - Begin HLT temp kick to 173° for 170° mash.
9.
12:45 - Begin 10 minute mashout circulation at 170°.
10.
1:05 - Begin sparge for 8 gallons, maintaining temp at 169°
11.
1:30 - Begin 90 minute boil
12.
2:00 - Add 2oz Saaz hops
13.
2:45 - Add 1oz Saaz hops
14.
2:50 - Add 2 LBS Candi sugar
15.
3:00 - Add 1/2 tsp Yeast Nutrient and 1 Whirlfloc tablet
16.
3:05 - Kill boil.
17.
3:15 - Start whirlpool.
18.
3:30 - Finish whirlpool
19.
3:40 - Begin cooling (after rectifying pump issues)
20.
With nearly 5 gallons, OG read 1.085. Added enough water to hit 5 gallons, OG @ 1.080 after adding water.
21.
3:55 - Pitched yeast after extensive oxygenation.
22.
Carboy moved to dark cabinet.....fingers crossed.

Still hitting this. Found a couple bottles tucked back in my Kegerator. Not as pleasant as it was initially, but still Belgianie and quafable.....and so, I did!

Notes:

Out-f***ing-standing! Running out at this point (a year later), but its still wonderful all these months later. "Might" have a few bottles left in the fridge, but not sure.... Originally, had it kegged, but needed the keg, so,.....used a beer gun to blast Co2 and then carbonated beer into well-cooled bottles. Worked rather well. All these months later, still outstanding... I WILL brew this again...
