Be careful with yeast smack packs...right after I mashed in, I smacked the yeast package to to release the inner package and managed to spray yeast and activator all up my arm. Thanks to Homebrew Heaven as I wasn't ready with anything to salvage the yeast, and had to buy another package. Ended up mashing for like 75 minutes because by the time I got back from getting new yeast it took time to heat the Sparge water. No worries...took time to crack inspiration beer (Firestone Opal) while it heated up. Using 1 lb of local Blackberry Honey sourced from the hives of Mike and Bev Doleshel in Everett WA. Added 5 degrees to the strike temp from the table below to make it just right for my Mash Tun for this Mash, and it settled straight in where I wanted it at 158 degrees. Wednesday 9/7 Racked to secondary and took rarity and a small taste. Very tart flavor...we'll see where that goes.

Notes:

So I tapped the keg on Sunday 9/25. Carbonation was good and had to vent off the pressure to get a clean pour. Beer has very robust flavor with lots of ginger and pepper spice character. Now at serving pressure it pour very well...very happy with it.
