Mash Steps

Special Instructions

1.
Mash Grains at 156 degrees and hold for 60 minutes
2.
Sparge with 173 degrees to collect 7.2 gallons
3.
Heat to boiling add hops on schedule
4.
With 15 minutes remaining in the boil, add Hops, Ginger, Honey and Irish Moss, stirring so that the honey and ginger don't burn.
5.
Finishing hops at flame out
6.
Chill to 75 degrees, transfer to fermenter and pitch yeast
7.
Ferment for one week at ~ 75 degrees, transfer to secondary for one more week and keg.

Notes:

So I tapped the keg on Sunday 9/25. Carbonation was good and had to vent off the pressure to get a clean pour. Beer has very robust flavor with lots of ginger and pepper spice character. Now at serving pressure it pour very well...very happy with it.
