Mash Steps

Special Instructions

1.
Strike water: 42 Litres at 164 F / 73 C.
2.
Mash grains at 150F/65.5C for one 79 mins. Thick mash.
3.
Added heat for 15 minutes to bring up to 156F/69C
4.
Sparge volume: 55 L at 180/82 F. Sparged for 40 mins.
5.
Do a 90 minute boil.
6.
Steep flameout hops for 10 minutes before chilling.
7.
Pitch cooled wort at 67F (19?C) and allow temperature to rise naturally to 70?F (21?C).
8.
When fermentation is complete, dry hop in primary fermenter for five days.
9.
Drink it as fresh as possible (~2-3 weeks after packaging) for maximum late hop character.
10.
Initial runnings: 24.5 p.
11.
Final Runnings 16.5 p Alcohol By Volume: 9.2%
12.
Specific Gravity: 1.0676 (before hop addition), based on final, blended brix.
