Notes: trying higher mash temp, lower IBU, putting cryo hops in during end of boil instead of dry hop, back to Munich, doing a mini hop burst with the cryo going second for only 5 min to preserve as much of the delicate stuff. Smooth brew day. Pitch went fine. A little yeast on the top after sloshing around. By 9pm there was a 1" K and it was chugging! Much slowed by the 8th. Still inching along on the 9th, temp has stayed at 67. Lower attenuation again. Tastes fruity but a little sweet at dry hop, def clean and lager-y. Swirled on the 11th morning. Tastes awesome at kegging, slightly sweet, nice yeast presence and some hop character. OG/pH: 10.3/5.08 (mash pH) FG/pH: 6.0/4.31 Pitch: 1/5 9a Temp: 1/8 9a DH: 1/10 9a Keg: 1/11 9p (30psi) Review: Cloudy dark yellow. Ripe mango, honeydew, and a hint of apple. Balanced, creamy, Munich toast mid-palate, lager-y yeast in the background, crisp to drying finish. Good, but not dialed yet.
