Yeast blend of Conan (Omega DIPA) and London Ale III (Wyeast 1318) Forgot to add additional 3# of Pale, so significantly undershot my gravity. When I noticed it was in the 1.050s, I boiled a bit more and got it up to 1.069 (OG). pH in the kettle was around 5.3-35 after CaCL (12g), Gypsum (2g), and 8ml of LA, so I added 4 more mg of LA to get it down in the 5.05-10 range. Reading was just under 5 in the kettle - should be fairly acidic. Fermented in the hanging FastFerment (first use). ...
