Special Instructions

1.
Water chemistry: Add 1 tsp of gypsum in 8 gallons total water.
2.
Water chemistry: Add 2 tsp calcium chloride in 8 gallons water.
3.
Water chemistry: Add a pinch of magnesium.
4.
Water chemistry: Add a pinch of kosher salt.
5.
Adjust pre-grain water to a pH of 5.9. Check mash pH (5.2 - 5.4). 35 drops of 88% lactic acid got me to 5.9.
6.
For 11.5 lbs of grain at 70 F ... use 6 gal strike water at 157 F for target mash temp of 150 F.
7.
Reverse step mash: 150 F -> 142 F -> 156 F -> 170 F
8.
Sparge grains to a boil volume of 7 gallons
9.
60 minute boil with hop additions as above.
10.
Cool the wort down to 60 F and aerate for an hour.
11.
Pitch Saflager W34/70.

Notes:

This has got to be the best beer I have made to date. Great head on this beer for two weeks into bottle conditioning. The nose is tangerine and pine apple. The tangerine and pineapple come through in the taste followed by a hint of coconut on the finish. This beer is deluxe!!

    Iodine test indicates that starch conversion is complete after the 150 F rest of the reverse step mash.
