Special Instructions

1.
Water chemistry: 1 tsp gypsum, 2 tsp CaCl, 1/4 tsp baking soda (8 gal total H2O)

Water chemistry: Add a pinch of magnesium and Kosher salt

Water chemistry: Adjust pre-grain water to a pH of 5.9.
4.
Grain temp = 70 F, 6.0 gal strike water @160 F
5.
Add 5 oz of roasted coffee bean to mash.
6.
Add a couple handfuls of rice hulls to the grain.
7.
Sparge to a pre-boil volume of 6.5 gal
8.
Add lactose with 10 minutes left in boil.
9.
Add 3 oz course grind steeped coffee with 2 min left in boil.
10.
Make a 1 litre yeast starter 24 hours prior to pitch.
11.
Carbonate to 2.1 volumes CO2 (Moderate carbonation)

    Did a bulk carbonation today. Sampled the beer and it was flat delicious. Repeat after me ... must wait two weeks for bottle conditioning.
