Brewed Saturday 10/16/21 2L starter of Imperial Global with 7oz of DME I was brewing a lager for the Wildt honey, but I severely over-boiled and gravity was 25 points too high. Looks like it's going to be a 7% Helles Bock instead of a 5% honey lager. OG 1.069-1.070 Pitched lager slurry Sunday morning - took off a bit slow, going 24 hours later but not rapid. I had cranked it down to about 48*, so I bumped it up to around 50* to get it going. F 10/22 gravity = 1.026 Raised the temp up to 55ish S 10/30 started d-rest at about 67* (ambient) for 3 days or so T 11/2 starting cold crashing
