Special Instructions

1.
strike to 160F, mash at 148F for 60mins with 5g h2o, collect first runnings and sparge for 45m with 4.2g h2o @ 170F
2.
add mosaic/amarillo/centennial at boil for 30m, then mosaic again at 20m plus 1 tsp Irish moss
3.
after flame out temp falls to 194F add crystal/palisade/tettnang/mosaic, steep for 20 min
4.
chill wort to approx. 77F or less, pitch yeast & primary for approx 7 days or until air lock bubbles stop
5.
taste test after primary 7 days for body and sweetness, possibly add lactose here
6.
dry hop at secondary for 5 days with crystal/palisade/tettnang/mosaic; pull and let rest for 2 days
7.
clean/sanitize fresh strawberries and puree, add to secondary with dry hop
8.
taste test before bottling for profile and any additional quantity of lactose add up to 1 lb
9.
make priming solution with 3.75oz corn sugar/1 cup water also add 3tsp vanilla extract in priming solution
10.
mix .5lb lactose with enough boiling water to dissolve add to batch and taste, add more per individual wants
11.
bottle for 7 days; chill before serving
