Mash Steps

Special Instructions

1.
Heat 4 gal water to 165 deg.
2.
Add 3.5 gal to MLT. Add grain bill. Adjust temp with remaining water to target 149 deg.
3.
Mash for 60 minutes.
4.
While mashing, heat 4.5 gal of water to 175 deg. Transfer to HLT.
5.
Vorlauf then transfer to kettle.
6.
Sparge with enough water to get 6.87 gal wort.
7.
Check pre-boil gravity. Target is 1.04.
8.
Bring wort to boil. Add hop first addition. Boil for 70 min.
9.
Kill heat. Add hop second addition and whirlpool.
10.
Check OG. Target is 1.05.
11.
Chill kettle to 60 deg. Rack to fermenter and pitch yeast.
12.
Ferment at 60 deg for 24 hrs.
13.
Reduce temp to 50 deg and ferment for 2 weeks.
14.
Raise temp to 62 deg for 2 days.
15.
Reduce temp 3 deg per day until temp gets to 35 deg (9 days if all goes as planned).
16.
Rack to pail. Mix 1/4 cup of trube with 1 oz of priming sugar. Add to pail and bottle. Rack to bottles and store cold.
