Mash Steps

Special Instructions

1.
Mash with 3.75 gallons @ 147*F 1 hour. Stir very gently at 30 minutes.
2.
Try not to introduce oxygen during boil- stir gently.
3.
Make a yeast starter with the Wyeast 2565. Cool, aerate well and pitch.
4.
Soak lime peel in vodka for 2 days. Add both vodka and peel to primary @6 days.
5.
Ferment @ 60*F until fermentation stops. Raise to 65*F for 24 hours for d-rest.
6.
Slowly drop temp to 35*F and age for 4-6 weeks before kegging.
