Special Instructions

Protein rest at 40c for 20mins
2.
Mash at 68c for 60 mins
3.
Ferment at 22c (20 to 25 for Philly Sour yeast), until fermentation slows (~10 days)
4.
Rack to secondary fermenter with cherries for 4 weeks (minimum)

Notes:

Refreshing level of sourness. Cherry comes through, and there is an almondy after taste. Level of carbonation is lower than targeted but fine for this style of beer (2nd stage fermentation was for 2months, probably needed to add some yeast for bottle priming).
