Based on meadow city saison from beer and wine making supplies in Northampton, ma. A Saison is a Belgian style farmhouse ail brewed for refreshment after long days in the field. Historically, saisons did not share enough identifiable characteristics to pin them down as a specific style, but rather were a group of refreshing summer ales made by farmers. Each farm brewer would make his own distinctive version.

2 quarts water 168F mash at 150-154 for 45 minutes

Sparge 2 gallons 165F

Bring to boil.

Turn off heat add LME
5.
Return to boil

Add sugar (1 cup) and hallertauer hops.

60 minutes boil
8.
Flame out add holdings hop
9.
Ferment 60-70F 4 days
10.
Rack to secondary for 7 days
11.
Bottle
12.
Stores as cold a as possible
