Special Instructions

1.
run water through charcoal filter
2.
add 1 tbsp calcium chloride, gypsum and 1 tablet campden pre mash
3.
mash at 156 degrees for 60 mins, boil for 60 mins
4.
cool to 170 degrees, add hops and whirlpool for 20 mins
5.
chill to 68 degrees and pitch yeast
6.
add 1st dry hop at 1-2 days (during active fermentation) and ferment until final gravity is stable, 5-7 more days
7.
Dry hop 3 days before packaging then cold crash and condition at 38-40F for 2 or 3 days
8.
Cold condition in keg for at least 1 week to allow harsh hop flavors to mellow. If hop burn persists, condition one more week
