Special Instructions

1.
Bring 4.75 gallons of water to 164f. Add 2.375 gallons to mash tun. Add grains into brew bag and steep for 120 minutes @ 152f
2.
Reheat other 2.375 gallons to 168f and batch sparge grains in mash tun for 15 minutes while this is spargeing Start to bring brew Kettle wort to boil
3.
Squeeze brew bag over Kettle to get out wort to 4.25 gallons
4.
Bring wort to boil and add DME 1 OZ of Centennial bittering hops. Boil for 60 minutes
5.
With 30 minutes left in boil add 2.5 OZ of Cascade hops
6.
With 15 minutes left in boil add 1 OZ of East Kent Golding hops & 1/4 teaspoon Irish Moss
7.
After 60 minutes you should have around 3.25 gallons of wort
8.
Chill wort to 72 degrees
9.
While wort is chilling take 1/2 water and heat to 86 to 95 degrees then add yeast to rehydrate. Stir gently and leave undisturbed for 15 to 30 minutes until foam appears at top. Stir to suspend yeast and let sit for another 5 minutes then add towort
