Special Instructions

1.
Single infusion mash with corn, grains, nibs at 145 for 60 mins
2.
Transfer 6 gal to boil kettle and bring to boil for 5 mins
3.
Add Simcoe then start 60 min boil clock
4.
15 mins: Add Irish moss, ancho chile, crushed annatto seeds
5.
5 mins: Add honey and cocoa powder
6.
Whirlpool and cool to 70F
7.
Transfer to fermenter and add yeast
