Dec 19/20 8am: Mashed with 16.3L, 3g CaSO4, 2.5gCaCl2, 5ml phosphoric

Hit 67.0c mash temperature. 45 minutes.

Huge stuck mash. Transferred to 16 gallon SS kettle. Lots of splashing and heat loss.

Sparged with 19L, 3.3g CaSO4, 2.8g CaCl2, 5ml phosphoric
5.
50c grain bed plus 81c sparge water for 68c mashout. 20 minutes.
6.
Dec 19/20 1pm: 22c wort into FC set to 22.5c
7.
Dec 20/20 830am: A bubblin' like wild. Laser temperature 22.9c.
8.
Dec 21/20 630: Laser at 22.2c, FC up to 24.5c.
9.
Dec 22/20 915pm: FC up to 25c. Mostly done fermenting.
10.
Jan 6/21 7am: Moved from FC to 16c basement to start cooling.
11.
Dec 16/20 7am: Took out into 16c room to cool. Light splashing while moving the carboy.
12.
Jan 24/21: Bottling day! 5.3oz to 18.5L at 25c for 2.75vol.
