Special Instructions
1.Bring 5.5 gallons of water to 164 DEGREES. Add to mash tun then add grains to bag and steep for 60 minutes
2.Bring 4 gallons to 168 degrees before 60 minute steep is done.
3.After 60 minutes lift bag and squeeze. Now vorlauf until clear and drain into Kettle
4.Take 4 gallons of water and sparge grains. Remove enough wort to get 7.75 gallons
5.Bring water to boil and add DME 3oz of fuggles hops
6.With 15 minutes left add 1oz of fuggles hops and 1/4 teaspoon Irish moss
7.After 60 minutes you should have around 6.75 gallons. Now cool wort to 72 degrees
8.While wort is chilling take 1/2 cup of water and heat to 86 to 95 degrees then add yeast to rehydrate. Stir gently and leave undisturbed for 15 to 30 minutes until foam appears at the top. Stir to suspend yeast and let sit for another 5 minutes.
9.Once wort has reached 72 degrees take OG Then pitch yeast and shake fermentor.
