Special Instructions

Heat 9.93 L to 73oC

Mash at 67 degrees for 60 mins.

Collect 16.1L gallons of wort, add 7.6L and boil for 90 mins

Add hops at times indicated

Dissolve cocoa in hot water add at 15 min remainings
6.
Add sugars, yeast nutrients, Irish Moss with 15 mins remaining
7.
Cool wort, pitch yeast, ferment at 17oC
8.
Add chocolate essence in secondary fermentation
