Brewed 8/8/20
Stepmash using fresh Dark Cloud Pilsner malt (that I thought was slightly under-modified). Protein rest at 136-38* for 30 mins, sacc rest at 147-149* for an hour. Added 8ml of LA to mash and another 6 or 8 ml to the sparge, but the pH was staying up near 5.6. Added another 6ml and got it down to 5.2-5.25 during the boil. Very restrained hopping with 2018 Hallertau from Stein.
OG = 1.047-48
Could only get it down to 90-92* due to the heat, so chilled overnight in the freezer. Got down to 58-60* the next day and pitched a thick slurry of WLP820 Oktoberfest. Split off 2.5-3 gallons that got the saison yeast from Georgia. Both were very slow to start with the Saison only picking up after 36 hours. The lager never took off, and I had to add a packet of S23 at 58-60 hours in....
S23 took a while to get going as well, but it finally took off Thursday morning (after a Sunday AM pitch). It took 4 days to get going, but I didn't smell any off flavors at any point. Started fermenting at 54*, dropped to 50-52* for a day or two, then bumped it up to 56-58* for two weeks while we were in Ohio.
Dumped the Kolsch before it (into a sour carboy) and ended up putting this on tap sooner than expected. Only lagered for a week or so, but it then sat in the kegerator for another few weeks before we really started drinking it. Started with a lot of sulfur that calmed down as it clarified.
