Special Instructions

1.
add a half tsp of calcium chloride to mash water
2.
add a half tsp of gypsum to mash water (both additions bringing pH from 8.5 to 7.4)
3.
mash at 147 to 150 degrees F for 45 to 60 minutes
4.
bring wort temp to 16 degrees
5.
ferment at 16 to 19 degrees C for 8 to 10 days(with the help of an air conditioner)
6.
raise temp to 18 to 20 degrees C and ferment for 2 to 3 days
