Special Instructions

1.
Target a mash thickness of 1.5 quarts water/lb of grain
2.
Add 0.25 g/gal gypsum to both strike and sparge water
3.
Add 0.6 g/gal CaCl to both strike and sparge water
4.
Chill to 60F, ferment at 58F
5.
After 4 days, gradually increase temp to 68F
6.
Lager for 3-4 weeks at 40F **
7.
Carbonate for a target of 2.7 volumes of CO2
