A friend and I are trying to grow 6 row on some land in southern IL this summer. 6 row is easier to grow around here than 2 row. You're right. Definitely use 2 row if you're going to try it. Adjust the amount accordingly. Wait 10 days though and I can report back how close it is.

So I opened one tonight and I was blown away. I was thinking I'd have to make a couple hop adjustments to dial it in but I think it's already damn close. It's definitely too early, thus a little flat. Body is a bit heavy so I'm going to dial down the base malt and add about 1/2 cup corn sugar after boil. I'm going to convert to 2 row now that I know 6 row works. To be honest, I haven't had a Pliny the Elder but I've been reading the Zymurgy 2009 article about brewing a DIPA and I'm starting to think a lot of Ninja va Unicorn was pulled from that. I don't really give a crap. I just want to make a close dipa that tastes like Ninja vs Unicorn and doesn't cost $10 a bomber. I think I'm there. Next time I'm also going to do a second dry hop like they do for Pliny. It can't hurt. Just keep everything sanitary and minimize excess oxygen exposure after primary ferm and you'll make some tasty beer no matter what. If you're a well schooled home brewer and reading this, please comment. I have thick skin and just want to make awesome beer.
