Special Instructions

1.
Steep specialty grains at 162F for 20 minutes.
2.
Bring to a boil.
3.
Remove from heat, add 2 lbs DME and cane sugar, and bring back to a boil.
4.
Add Nugget hops, coriander, black pepper, and white pepper, and boil for 45 minutes.
5.
Add remaining 5 lbs DME and boil an additional 10 minutes.
6.
Add Crystal and Mt. Hood hops and boil an additional 5 minutes.
7.
Cool to 70F and pitch yeast.
8.
Ferment at 65F for 14 days.
