Mash Steps

Special Instructions

1.
Mash at 66C for 60 mins with 13 litres liquor
2.
Sparge with 18 litres liquor at 77C
3.
Boil for 60 mins, adding hops as specified
4.
Whirlpool for 2 mins
5.
Crash cool to 21C and pitch yeast
6.
After 3 days, dump trub and add sour cherries with some pectinase
7.
Ferment for further 4 days at 20C
8.
Bottle and condition for 4 weeks at 12C
