Special Instructions

1.
SPARGE WATER: Heat 6 gallons in large kettle (30% distilled_1.8 gallons)
2.
SPARGE WATER: Add 1.5 grams gypsum, 1.6 grams CaCl, .8 grams Epsom
3.
SPARGE WATER: Heat to 175 degrees

MASH WATER: Heat 3.8 gallons in small kettle (50% distilled_1.6 gallons)
5.
MASH WATER: Add 1.1 grams gypsum, 1.2 grams CaCl, .6 grams Epsom
6.
Mash Water: Heat to 165.4 degrees
7.
Mix grains with MASH WATER in the tun (assume grains are at 68 degrees)
8.
Measure MASH WATER temperature. Should be 152 degrees.
9.
Seal tun for 60 minutes
10.
Slowly recycle liquid from tun until clear
11.
Slowly begin to collect 6.5 gallons of wort in small kettle while adding SPARGE WATER
12.
Boil wort for 5 minutes
13.
Add 1 ounce of Centennial hops (total boil time: 55 minutes)
14.
After 40 minutes, add 1 ounce of Cascade hops (total boil time: 15 minutes)
15.
After 10 minutes, put chiller into wort to sterilize, add bring back to boil
16.
Boil for 5 minutes and then add 1 tsp of Irish Moss

Flameout
18.
Add .05 ounce of galena hops at flameout
19.
Cool wort to 75 degrees within 30 minutes
20.
Take hydrometer reading
21.
Pour wort into fermenter and top off at 5.0 gallons (recalculate OG if water added)
22.
Aerate wort and move inside
23.
Pitch vial of Clarity Ferm
24.
Pitch yeast on top of foam and let hydrate until creamy
25.
Gently stir in yeast
26.
Seal and ferment for 7 days at 68 degrees
27.
Transfer to secondary after 7 days and dry hop with .5 ounce of galena for 3 days
28.
Remove dry hop bag and lager for 11 days
