Special Instructions

1.
Steep specialty grains at 165F for 30 minutes, then remove kettle from heat.
2.
Return kettle to heat, and bring to rolling boil for 60 minutes.
3.
With 10 minutes remaining add Irish moss, 1oz Citra, and 1oz Amarillo hops
4.
Chill wort to 75F and transfer to primary fermenter
5.
Ferment at 68F for 7-10 days, until active fermentation ends.
6.
Transfer to secondary fermenter and ferment for 7-14 days.
