Dec 1/19 930am: 3.3L/kgAdded 3.9 gal to hit 65.7C/150.2F mash temp. Added ~1/3tsp of powdered amylase enzyme to the mash

5.5ml phosphoric/3g CaSO4/1.5g CaCl2 to strike. 3.5ml phosphoric/4g CaSO4/2g CaCl2 to sparge

11am: Added 4.9gal 75C sparge water to hit 67.3C/153.1F

Dec 1/19 2pm: 1.040SG wort at 23C into FC set to 22C with no cooling.
5.
Dec 2/19 7pm: Added ~2lbs Costain Honey (warmed with 60C water) to high krausen beer at 22.5C laser
6.
Dec 2/19 7pm: Bumped temp up to 23.5
7.
Dec 3/19 5pm: Added ~3 drops of Amylo 300. Roughly 0.5ml.
8.
Dec 5/19 645am: Added 2oz of 2017 Aramis to low krausen beer at 23.8C
9.
Dec 6/19 715am: Bumped FC up to 24.5C
10.
Dec 19/19 5pm: Put carboy wrapped in a towel outside FC to start cold crashing.
11.
Dec 24/19 1030am: 6.65oz dextrose to 20.5L (5.42gal) at 24.7C (76.5F) for 3 volumes.
