Special Instructions

1.
Bring 3.5 gallons of water up to 163.6 degrees for 75 min mash
2.
Sparge grains with ~4.5 gallons of 170 degree water until kettle runnings total 6.75 gallons
3.
Bring kettle to a boil and follow 90 minute schedule
4.
After flameout, cool wort to 90 degrees and move to fermentor in chilled fridge -- add yeast once temperature has dropped to 70 degrees
